Abstract
The Cordon Vert cookery school in Altrincham, Cheshire, is introducing a Catering for Vegetarians course to give professional caterers practical guidelines, information and inspiration to provide top vegetarian dishes.
There are three levels in this course: Catering for Vegetarians; Creative Gourmet and Diploma Finals Examination. Level One – Catering for Vegetarians – is a two day course offering a thorough foundation in vegetarian cuisine through a mixture of talks, group projects and three practical workshop sessions. Topics covered include vegetarian diets and nutrition, suitable ingredients, and an introduction to vegetarian menu planning. The 'Creative Gourmet' course will help chefs build on the knowledge and expertise developed during level one. Practical workshops include dietary restrictions and fine dining, as well as a creative session based on a selection of mystery ingredients. And the one day level three course – Diploma Finals Examination – covers the Diploma Final exam which consists of a planned three course function-style meal followed by a two course buffet based on a list of mystery ingredients. The school is also offering one day workshops for professional chefs simply looking to develop their repertoire of vegetarian recipes with hands on help from master tutors. These sessions will run from 9.30am until 4.30pm. Paul Gayler, executive chef at the Lanesborough Hotel, commented: "Vegetarian cuisine is changing and customers are becoming more sophisticated.
