From schools and hospitals to universities, care settings and the armed forces, the Public Sector Catering Award series will showcase the people helping to shape the future of public sector catering.

In the specialised world of care catering, he has proven to be far more than an exceptional chef; he is a leader who understands that food is the primary vehicle for dignity, health, and emotional wellbeing.

Darren’s approach to nutrition goes beyond mere compliance. He advocates tirelessly for the resident experience, ensuring that every menu is a thoughtful blend of clinical necessity and culinary joy.

His commitment to the National IDDSI Framework is exemplary; notably, following a masterclass with Tea from the Manor, Darren introduced high-quality loose-leaf teas across all sites, specifically adapted to be thickened to correct IDDSI fluid levels without compromising on flavour. This attention to detail ensures that residents with dysphoria enjoy the same sensory pleasures as any other diner.

In an industry often fraught with high pressure, Darren has become a vocal champion for mental health. Inspired by The Burnt Chef Project, he has dismantled the ‘tough it out’ culture, implementing an open-door policy and professional support pathways. To foster team cohesion, he led a wild foraging and cooking day followed by yoga—a testament to his belief that a nurtured team provides the best care.

Darren’s strategic acumen is as sharp as his knife skills. By partnering with Greetwell Purchasing Solutions (GPS), he secured £10,000 in savings over 18 months, despite the global supply chain volatility caused by the conflict in Ukraine. His foresight in working ‘three steps ahead’ has ensured consistent quality whilst managing rising costs.

His environmental credentials are equally impressive. Through the Kafoodle system, Darren has integrated carbon footprint tracking and food waste monitoring. By repurposing vegetable offcuts and smart menu planning, he has slashed wastage by 33%—a remarkable feat for an operation serving 185 residents three times a day. Furthermore, his initiatives to recycle cooking oil into biofuel now generate £2,200 per annum for the business, whilst on-site vegetable gardens provide fresh produce and therapeutic engagement for residents.

Darren’s influence extends into the wider community through his work with MK SNAP, a charity for adults with learning disabilities. By designing kitchen processes and mentoring staff to reopen their community café, Darren has helped create paths to employment for those who might otherwise be sidelined.
