TUCO Conference celebrates lasting links & lively lessons at Loughborough

From 21-23rd July 2025, TUCO members from across the country gathered at Loughborough University for three energising days of learning, networking, inspiration and great food.

The 2025 TUCO Conference embraced the theme ‘Winning Tastes’, a nod to Loughborough’s Olympic legacy and a wider celebration of the role that exceptional catering plays in student success and wellbeing.

Immersive Beginnings: Pre-Conference Activities

Delegates arriving on Monday had the opportunity to explore Loughborough and connect in a relaxed setting through a range of pre-conference activities. These activities set the tone for what would be a vibrant, connected event.

Options included a behind-the-scenes tour of a family-run brewery, an immersive para-athlete experience that reflected the university’s commitment to inclusion and performance, a guided walk highlighting Loughborough’s innovative campus food outlets, and a more indulgent cheese and wine pairing session that brought together conversation and flavour.

A Warm Welcome and a Strong Start

Tuesday saw the official start of the Conference, with Marverine Cole, broadcast journalist and GMB presenter, as host. TUCO chair Amanda Pettingill opened proceedings with a thoughtful reflection on the previous 12 months, highlighting collective progress and setting a forward-looking tone.

She was followed by Professor Nick Jennings, vice chancellor of Loughborough University, who welcomed attendees and emphasised the institution’s proud history of excellence in sport, research, and community partnership.

Inspiring Keynotes That Sparked Conversation

A highlight of the day was keynote speaker Fred Sirieix, well-known from television and the hospitality industry, who brought his trademark energy to the stage. His talk offered delegates real insight into what makes service truly exceptional.

Speaking from both professional experience and personal belief, Fred reminded the audience of the emotional intelligence, consistency, and people-first thinking at the heart of hospitality. His charisma and enthusiasm were infectious, setting a powerful tone for the rest of the conference.

The morning continued with Martin Richards, who explored the concept of reframing crisis as an opportunity for influence. His thought-provoking session challenged the room to reconsider how leadership operates under pressure, providing fresh perspectives on resilience and adaptability.

After lunch, Katy Moses of KAM Consultancy took the stage to present exclusive new research on recruitment and retention in hospitality. Her insights were rooted in current data and industry challenges, prompting conversation around culture, expectations, and generational shifts. The presentation was both informative and action-oriented, giving attendees tangible takeaways.

Bringing Tuesday’s programme to a joyful close were David and Stephen Flynn, co-founders of The Happy Pear. Their session focused on practical ways to build a happier, healthier life with humour, energy, and plenty of audience participation (including spontaneous hugs). Their uplifting message about balance, wellbeing, and community spirit left the auditorium buzzing.

Engaging Exhibitions and A Night to Remember

Between sessions, the bustling exhibition space gave delegates a chance to discover new products, connect with over 115 suppliers, and sample innovative food and drink. Delegates used the opportunity to network with TUCO suppliers and take back ideas for new products for their menus, kitchens and bars.

On Tuesday evening, the social event displayed a reimagined traditional fair. Complete with fairground rides, vibrant Bhangra dancing, street food, and live music, the evening provided a chance to unwind, catch up with peers, and celebrate the community spirit at the heart of TUCO.

Wednesday: Energy, Emotion, and Empowerment

Day two opened with a burst of positivity from Action Jackson, self-styled UK Ambassador for Happiness. His lively, high-energy session set a dynamic tone for the day. His message centred on optimism, purpose, and the idea that positivity can be a daily practice, not just a fleeting feeling.

Following Jackson was performance psychologist Jamil Qureshi, who shared compelling insights on how to unlock potential, improve team performance, and navigate change. Drawing on his work with elite athletes and business leaders, Jamil offered both strategic frameworks and personal anecdotes that resonated with the audience.

Later in the day, former political strategist and communicator Alastair Campbell brought his signature candour and clarity to the stage. He reflected on the importance of mental health, communication, and purpose in leadership. His talk struck a powerful balance between personal vulnerability and professional insight, sparking meaningful discussion.

Closing the keynote series was entrepreneur and community banker Dave Fishwick, best known for ‘Bank of Dave’. His down-to-earth style, humour, and storytelling captured the audience, as he recounted his journey of starting a bank to help local people and then going on to become the subject of a Netflix film. His emphasis on values-led business and social impact struck a chord with many in the room.

Closing Celebration and A Look Ahead

The 2025 Conference concluded in style with a black-tie Gala Dinner, featuring outstanding food, entertainment, and the much-anticipated TUCO Awards. It was a fitting finale that celebrated individual and team achievements across the TUCO membership.

In addition to professional development and networking, the Conference also had a meaningful social and environmental impact. Attendees helped raise £4,040 for the Natasha Allergy Research Foundation, supporting food allergy awareness and research.

TUCO’s sustainability goals were reflected in its carbon offsetting efforts: 83 tonnes of carbon were offset through the planting of 83 trees. Furthermore, surplus food and drink from the event were donated to the Bilsthorpe Food Hub through sponsor Brakes, reinforcing TUCO’s commitment to community and reducing waste.

Looking ahead, the 2026 TUCO Conference will take place at Edge Hill University. With this year’s event setting such a high bar, there’s already plenty of anticipation for what’s to come.
