The Clink Charity opens new bakery at HMP Brixton

The Clink Bakery opened in October 2022 at HMP Brixton, next door to the ‘award-winning’ Clink Restaurant.

The team is made up of six students who are trained and guided by Patissier Chef Trainers Abbie Mallinson and Georgia Turnell.

The students are currently working towards gaining their City & Guilds NVQs in General and Professional Patisserie, which includes learning how to work with hot/cold desserts and puddings, pastry products as well as biscuits, cakes and sponge products.

The students are currently being trained and assessed on bakery items such as chocolate eclairs, tray bakes, fruit bavarois, sweet tarts and pastries. During the festive season the team produced Christmas hampers for prison staff at HMP Brixton.

Simon McKinnon-Brahams, general manager, said: “We’re so excited to be training students in the bakery. The bakery itself was designed by myself and one of our very talented students called Jak. Our long-term goal is to work alongside Clink Events to produce and deliver for external events, as well as selling our items to local businesses.”
