Mark Holmes wins North West SCoTY regional final

Abstract
Mark Holmes of Metrofresh, the catering arm of Wigan Metropolitan Borough Council, has won the North West regional final of LACA's School Chef of the Year competition.
He will take his place in the final on May 23 at the Defence Foodservices School at Worthy Down in the competition that is sponsored by Nestlé Professional's Maggi brand. His winning dishes at Knowsley College on March 7th were a main course of Chicken Roulade with Potato Rosti, Sticky Carrots, Pea Puree and Tarragon Sauce followed by a dessert of Raspberry Cream, Cheerios Shortbread, Passion Sauce with Lavender Honey. He works at Abraham Guest High School in Wigan. The winner of the Highly Commended Main Course went to Samdurkia Costa, who works at Pear Tree Primary School for Cheshire East Catering. She cooked Creamy Coconut Chicken With Rainbow Rice. The winner of the Highly Commended Dessert was Wendy Winkley of Tameside Primary School Catering, who works at Greswell Primary School. She cooked Twinks Apple and Raspberry Crumble Served with Real Custard. Under the rules of the competition a maximum of £1.50 is allowed for the cost of a single meal and each menu must include a dish made using a Maggi product and at least one Nestlé brand.
