Abstract
A new executive chef has been appointed at the Whitechapel Gallery Dining Room.
Michael Paul joins from the Royal Institute of British Architects in Portland Place, W1. He said: "I'm a huge fan of this fantastic restaurant and event space and I'm very excited to launch my new menus. My focus will be on modern British food, showcasing quality produce at its best time of year. This will give my menus a natural change and using local, seasonal produce will keep everything very fresh and flavoursome." Paul's favourites on the current menu include 'char-grilled rump of romney marsh lamb, wild garlic potato terrine, roast red pepper and saffron dressing', 'pan-fried sea trout, buttered Jersey royals, samphire, tomato vierge' and for pudding 'warm Amedei 75% cocoa chocolate fondant, caramelised poached pineapple.' Mark Philpott, owner director of Vacherin, caterers at Whitechapel Gallery said: "Michael is a hugely talented young chef and I am thrilled that he is joining us at Whitechapel Gallery."
