TUCO Winter Conference gives members valuable insight

Abstract
The TUCO Winter Conference, which took place on 30th November at Newcastle University, focused on ‘horizon scanning for hospitality’ and enabled members to pick up some valuable insight ready to implement in the New Year.

The first keynote speaker was Andrew Selley from Bidfood who discussed cyber security, reaching net zero and targeting catering efforts on upcoming trends.

Paul Taggart and Tara Purcell from the National Food Crime Unit (NFCU) spoke about how the rising price of food is leading to an increased risk in food crime, particularly on red meat items.

Dr Antonio Gouveia, New Harvest research fellow and co-founder of 3D Bio-Tissues, explored cultured meat products and lab-grown meat, while Dr Sam Mudie spoke about energy price rises.
