
ProVeg International has welcomed this decision by the caterer to expand the availability of plant-based foods. The caterer’s decision came after support from the campaigning organisation Mercy for Animals.

Xanterra, which operates over 50 restaurants across the national parks, points out that the ingredients in the plant-based dishes are local and seasonal and therefore have a lower environmental impact aligning with the growing demand for food that is both delicious and responsible.
