Westminster Kingsway College puts Heritage Prime on the menu

Westminster Kingsway College (WKC), the catering school which trained Jamie Oliver, Antony Worrall Thompson and Ainsley Harriott, is putting beef, pork and lamb from Heritage Beef on the menu.
It will use the meats in its fine dining restaurant The Escoffer Room and in its culinary master classes. Ian and Denise Bell, who founded Heritage Prime 13 years ago, have hosted students from the Culinary Institute of New York and are delighted to have struck this new partnership. "Education is a key factor in the way we run our farm," said Ian Bell. "We want to teach people that there is a valuable alternative to intensive farming and supermarket shopping." James Lui, third-year course coordinator at Westminster Kingsway College (WKC), says it is vital to teach young chefs where food comes from and to get back to basics. "When training chefs and demonstrating the quality points of meat, Heritage Prime is our benchmark of excellence," says Lui. "Our students are the future of cooking and we are keen to promote the importance of the connection between chefs and the farmed landscape."
