From schools and hospitals to universities, care settings and the armed forces, the Public Sector Catering Award series will showcase the people helping to shape the future of public sector catering.
At the heart of his success is the Care UK Chef Academy, an initiative Daniel has nurtured from its inception in 2020 into the gold-standard apprenticeship scheme it is today.
Launching a culinary academy during the height of the Covid-19 pandemic was a formidable challenge, yet Daniel remained resolute. He understood that despite the industry-wide disruption, the growth of frontline staff could not be paused.
Collaborating with Lifetime Training, he pioneered a digital-first apprenticeship model that allowed kitchen assistants and trainee chefs to master complex cookery methods remotely.
As restrictions eased, Daniel skilfully transitioned this into a sophisticated hybrid programme, ensuring the academy evolved into a supportive environment that identifies and grooms the future leaders of Care UK’s kitchens. The results speak for themselves: with 46 colleagues currently enrolled and 45 successful graduates to date, the programme boasts an exceptional success rate.
What truly sets Daniel apart is his hands-on approach. He maintains a personal connection with every learner, conducting rigorous quarterly reviews to ensure no student is left behind.
When an apprentice faces hurdles, it is Daniel who reaches out personally, offering the mentorship required to get them back on track.
His impact extends far beyond general culinary skills; Daniel has been a tireless advocate for the International Dysphagia Diet Standardisation Initiative (IDDSI). Recognising that traditional apprenticeship assessments often fell short of Care UK’s high standards for modified diets, Daniel personally conducted intensive training for external assessors.
By focusing on the artistry of piping and the precision of food fortification, he has ensured that learners must now physically demonstrate their mastery of IDDSI standards. This ensures that residents requiring soft food diets receive meals that are as visually enticing and nutritious as any other—a vital contribution to resident dignity and safety.
Daniel’s passion for mentorship is rooted in a career dedicated to service. From his early days as an NVQ assessor to his volunteer work teaching vital cooking skills to homeless youth, he has always understood that culinary education is a tool for empowerment.
His greatest pride lies in the success of others, such as the former host who, under his guidance, rose through the ranks to become an award-winning head chef.
Through his involvement in the ‘Open Doors’ scheme, Daniel also inspires the next generation, showing schoolchildren—including those with additional learning needs—the rewarding possibilities of a career in care catering.
For his profound dedication to the craft, his technical expertise, and his role as a champion for both staff and residents, Daniel Phillpott is a truly deserving recipient of this award.
