Challenging chefs to create inspiring ways with wraps

Award winning chef Peter Gordon, co-owner of The Providores and Tapa Room, has teamed with Discovery Foods and Santa Maria to find the UK’s most inspired creator of gourmet wraps for the fine dining sector.
The competition, in association with the Craft Guild of Chefs, will award the winner an opportunity to showcase their skills in a masterclass with Gordon at his new Kopapa restaurant in Covent Garden, London, where he has already created five exclusive gourmet wraps recipes using Santa Maria's blend of exotic spices in soft flour tortillas. The prize also includes a visit to Santa Maria's new innovation centre and spice factory in Sweden, where the winning chef will develop their own signature spice blend, plus one year's membership of the Craft Guild. Five runners up will receive a gourmet wraps gift box containing a recipe brochure full of innovative menu solutions, a mixed case of six 'more. by Santa Maria' spices including pasta basilico and orange pepper, and a signed recipe book by leading chef Marcus Samelsson. The judging panel includes Gordon, Craft Guild CEO Martin Bates and Ashley Pinder, head of foodservice at Discovery, who will be looking for recipes that deliver tasty wraps designed to satisfy the most discerning of palates. Shortlisted entries will receive the spices featured in their recipe to use in their kitchens. Once perfected, they will need to hone and submit their final recipe, complete with one image. If chosen for the concluding stage, the recipe will be cooked by Discovery and judged in the final. "The development of culinary skills in kitchens across the country is of paramount importance and key to this is raising awareness of innovative products and concepts as profitable menu solutions," said Bates. "As such, we are delighted to support Discovery and Peter Gordon in launching the gourmet wraps competition to chefs in search of more adventurous tastes for their customers." Pinder added: "Since the recession, consumers are cooking at home more, so when they do dine out, they are looking for something extra special – high quality, good value food that provides more adventurous and exciting flavours than those achieved in the home.
