They are each bringing the recipes from their award-winning menus to the venue, Hilton London Metropole in Edgware Road, where executive chef Paul Bates will help them combine different elements to create dishes suitable for a banquet service.
Those invited to take part this year are Ilona Tomza, who is the development chef at Porthaven Care homes and winner of the NACC’s Care Chef of the Year competition, and Carolyn McGregor, who works for Tayside Contracts and is ASSIST-FM’s Scottish Local Authority Cook of The Year.
They are joined by the two-man team that won the NHS Chef Competition last year - Nedko Rusev and Joe Omolo. Ned is chef manager at Guy's and St Thomas’ Hospital in London, while Joe is an apprentice chef at Stepping Hill Hospital, Stockport.
Ilona’s winning menu featured balsamic vinegar and muscovado Coq au Vin for main course, and a whiskey and orange crème brûlée with almond puff pastry fingers and semi-frozen orange segments for dessert.
Carolyn’s menu included a salmon Kiev for starter, a main course of venison, followed by a lemon mousse for dessert.
Ned and Joe served up a menu that included saganaki, cauliflower steak with romesco sauce, hake with cauliflower sauce, and fig cake to take the NHS title.
They will be cooking and serving the new awards night recipes to a tasting panel, which will also look to pair each course with a suitable wine.
