It means that the preservation of this way of eating is vital to the survival of the traditional culture. It was only the second national traditional cuisine honoured as such, after French food. with Mexican cuisine recently joining them on the list.

  • In Japan, shirako is popular food that is served on top of rice, fried in tempura batter or even on top of custard. It is the sperm sacs of cod, angler fish or puffer fish and is said to have a sweet custardy taste.
  • In 2017 Tokyo boasted the most Michelin stars with 302 - there were 12 restaurants with a three Michelin star rating. Other Japanese cities, Kyoto and Osaka, came in the top five for Michelin stars with 135 and 116 respectively.
