Having recently become part of RACA’s College Community Programme, a scheme setup to support catering colleges around the country nurturing the next generation of talent, MK College is taking its existing ‘Taste of Tuesday Guest Nights’ to an entirely new audience. Held in the Brasserie on the Bletchley campus, the evenings see culinary students collaborate with guest chefs to showcase their skills and talent.
The first of the RACA partnered events took place on the 10th March with chef, Stephen McLaughlin of Restaurant Andrew Fairlie, Scotland’s only two Michelin-starred restaurant, impressing dinners with a four-course menu.
For the college’s students, the day of learning opportunities started with a deep dive into the world of wild venison. Students had the chance to practice hands on butchery and learn about provenance and seasonality while preparing wild roe deer saddle for evening service.
Richie Carter, workplace trainer at MK College said: “The morning session with the apprentices was both intriguing and informative and we all thoroughly enjoyed it.
“This, coupled with the excellent service at the restaurant in the evening, ensured all our guests left with wonderful memories, as did we all. It was enlightening; the students were ambassadors for the college and rose to the challenge admirably. The food looked and tasted sensational.”
