New law introduced on gluten free food

Abstract
The first ever law governing gluten free food has been introduced.
The law applies to both pre-packed and loose foods, so manufacturers, restaurants, cafes etc will all be equally affected. The new law requires foods labelled as gluten-free to be at a level of 20 parts per million (ppm) or less. Market research group Mintel estimated that the UK retail Free From market is expected to hit £519m by 2016, and it is still growing at nearly 10% every year. Coeliac UK, the national charity for coeliac disease has research showing that the UK gluten-free catering market is worth £100 million of new business to the sector. Ways to label food 1. Gluten-free - Applies only to food which has 20ppm or less of gluten 2. Very low gluten – Applies to foods with 21 – 100 ppm of gluten but this can only be used for specialist products that have been treated to reduce the level of gluten in them so we don't expect to see this in catering 3.
