Hoki, also known as the Blue Grenadier, is a widely sustainable fish from New Zealand. The New Zealand Hoki fishery was the first large scale whitefish operation to be certified as sustainable by the Marine Conservation Society (MSC) back in 2001.
The MSC classify it as ‘Best Choice’ and the New Zealand fishing industry takes great pride in the fact that its stocks are among the best managed in the world. NH Case has been supplying fish to the NHS for over 70 years and is one of the UK’s most experienced and responsible fish processors and frozen fish suppliers.
A spokesperson for NH Case said: “Hoki fillets are white and flake easily when cooked, they are ideal for most cooking methods including being baked, fried, grilled, steamed, curried and sautéed. Hoki fillets are a convenient, versatile option to consider for cooking in food service and healthcare settings, many chefs citing the fish’s qualities as having few bones and a firm texture.”
Hoki is available to buy through NH Case where the stock is guaranteed to be ‘Frozen at Sea’, meaning that the fish is filleted and frozen within a few hours of being caught and ensuring a top-quality and nutritionally loaded product. It also is significantly less expensive than other white fish so really opens the doors to bringing protein-packed fish onto menus.
