The full line-up of 10 regional winners has been finalised and now LACA’s School Chef of the Year competition is gearing up for the national final on May 23.

That will take place at the Food Services Wing, Defence Logistics School at Worthy Down in Hampshire.

Head of judges Justin Clarke, head of development with sponsor Nestle Professional’s Maggi brand, began the regional final round at Croydon College in London on January 17 and finished up at the South East regional final at Brooklands College, Weybridge on March 22.

Under the terms of the competition all entrants have to be able to demonstrate their preparation, cooking and presentations skills by creating a healthy, balanced two course meal comprising of a main course and a dessert in two hours.

A maximum of £1.50 is allowed for the cost of a single meal.

As part of the eight different judging criteria which apply at all stages of the competition, each contestant must also include seasonal ingredients that have been sourced locally or typify the contestant’s region.

In addition, each menu must also include a dish made using a Maggi product, designed to enhance the creativity of the menus.

The range of products available to help contestants includes Maggi Rich and Rustic Sauce and Maggi Bouillon Paste. Also, at least one Nestlé product is required in each course of a contestant’s menu for the competition.
