Sodexo chefs win three-week stay in US

Matthew Greaves, Sodexo's head chef at Bradford University, and Michael Godfrey, Sodexo's head chef at Eton College, have joined Sodexo's Global Chef Programme and been rewarded with a three-week stay in the US to share their culinary expertise with colleagues in America.
The programme, which has been operating since 2003, enables Sodexo's top chefs, who rank among the best of their profession in the world, to share their cuisines and cooking techniques with clients, customers and staff between affiliates around the world. It also gives them the opportunity to learn from each other's expertise. Greaves has just returned from his three-week US tour, where he worked alongside over 40 Sodexo chefs in Minneapolis, St Paul, Maywood, Racine, Elk Grove Village and Chicago. Among the sites he visited and worked at were University Hospital in Minneapolis, where he demonstrated to his American colleagues classic British dishes such as Lancashire hot pot and sticky toffee pudding. He also visited Chicago's Loyola University and University of Chicago Hospital, where he prepared a traditional high tea. Godfrey's three-week visit took him to New England where he attended the University of Massachusetts and worked alongside over 40 staff to demonstrate the techniques, tips and products that make for a successful and authentic British meal. He also visited Wheelock College, an all-women's college in Boston followed by a stint helping to prepare fish and chips at the Show Institute, which has a British school and large contingent of British nationals. He also attended Bentley University, Endicott College and then finally Keene State College.
