Sodexo unveils vegan recipes for Veganuary

Global services company Sodexo, who operates in the public sector, unveiled six vegan recipes for people to try at home during Veganuary.

Veganuary encourages people in the first month of the year to go vegan. Research suggests a growing number of people are turning to plant-based diets to improve their health and to help reduce their impact on the environment.

Sodexo has committed to cut their carbon emissions by 34% by 2025. This will be achieved by:

  • Preventing food waste: We will reduce food waste by 50% by 2025.
  • Promoting plant-based meal options: 33% of our menus to be plant-based worldwide by 2025.
  • Sourcing responsibly through local and short supply chains.

The Sodexo community chefs have created several healthy vegan recipes for people to try out at home. Each online recipe contains a list of ingredients and a method of how to replicate these dishes.

The vegan recipes include:

  • Jerusalem artichoke and hazelnut soup recipe
  • Mushroom, pak choi and noodle soup recipe
  • Baked courgette and aubergine with preserved lemon recipe
  • Gingernut, clementine and cranberry cheeseless cake recipe
  • Spicy plant-based ‘sloppy Joe’ stir fry in bao buns recipe
  • Tandoori jackfruit roll and dirty fries recipe
