Spotlight on food safety at Hotelympia’s Salon Culinaire

The Chartered Institute of Environmental Health (CIEH) will sponsor the Food Safety Challenge at the British Cookery Championships for a second year running at the Excel Centre, London from 26 February to 1 March.
With some of Britain's leading chefs vying for a number of coveted prizes, the CIEH's continued involvement will ensure that participants are judged on their food safety skills and knowledge as well as their culinary skills. Commenting, Geoff Ward, of the CIEH, said: "The CIEH is delighted to sponsor the Salon Culinaire 2012 Food Safety challenge. We were very pleased with the enthusiastic response from all the chefs that took part last year and demonstrated such a strong commitment to food safety." "I have been advising food businesses for over thirty years about the importance of food safety. The key lesson I have learnt in my career has been that while governments can legislate in order to really ensure food safety you need to create a 'safety culture' within a business. "Whether it is a large hotel chain or a beach side juice bar, it is about making food safety a completely natural part of the way people in the business do things. Food safety should come as naturally to a chef as boiling an egg." The CIEH will be awarding trophies, medal, certificates and prizes for competitors who demonstrate highest standards of food safety and hygiene.
