Abstract
Leading hot spice brand Tabasco, owned by the US based McIlhenny Company, is the focus of the Student Street Food Challenge 2012 held in association with the Craft Guild of Chefs.

Aimed at finding the industry’s hottest chef, the competition invites student chefs of all ages working in the UK to create an original dish inspired by flavours and tastes taken from some of the world’s most popular cuisines, such as Latin American, Asian, Indian, Middle Eastern, European and Mediterranean cuisines.

The dishes must be practical to prepare in a foodservice kitchen, incorporate easily sourced ingredients, and include one or more of the following flavours from the Tabasco range: original red pepper, green jalapeño pepper, chipotle pepper and habanero sauces.

Ten finalists will be short-listed from the paper entries and invited to cook, prepare and present their dishes in 90 minutes before a team of judges at the University of West London on November 5.

Top prize for the winning chef is a trip to the home of Tabasco – Avery Island in Lafayette, Louisiana – to experience the delights of the region, and all the finalists will be rewarded with a suitable Tabasco inspired prize.

• Closing date for entries is October 12 2012. Entries should be sent to the Craft Guild of Chefs or emailed to Craftguild@btconnect.com
