
On the evening of 27th November, the event kicks off with an informal food festival celebrating global cuisines. Delegates will enjoy a variety of dishes while networking with their peers. There will also be a secret competition that will challenge participants in a fun and hands-on way.
Hosted by TV's Kate Quilton, the main conference day on 28th November runs from 8am to 5pm. The day will feature a series of culinary demonstrations, including Punjabi Indian-inspired dishes by Dipna Anand, Caribbean flavours by Duchess Nena and world cuisine concepts from event sponsor Brakes.
TUCO Competition winners Ashley and Joe from Leicester University, alongside the Beefy Boys, will also present, sharing recipes, techniques and menu ideas. Between cooking demonstrations delegates can take part in breakout sessions and visit the supplier exhibition to explore new products.
The breakout sessions include a workshop on pulses and sustainable cooking led by Jenny Chandler, an olive oil tasting covering flavour profiles and a food photography workshop with practical tips on presentation.
A panel discussion with university chefs of global heritage will explore the contribution of international cuisines to UK university menus and inclusive dining experiences.
