Winning prawn flatbread is sandwich of the month

The Lemongrass Prawn and Griddled Spring Vegetable Flatbread, winner of the Canadian Northern Prawn category in the Cheltenham heat of the Sandwich Designer of the Year competition, has been chosen as the Sandwich of the Month for August.

Made with Canadian cold water prawns and created by Rachel Price-Whittle, of Yew Tree Café, Wootton Wawen, Warwickshire, the flatbread won wide acclaim from the competition judges earlier this year.

Prawns are the fourth most popular sandwich filling amongst commercial sandwich buyers and flatbreads and speciality breads continue to grow in popularity as an alternative to traditional sandwich bread.

Last year over 7,600 tonnes of prawns were consumed in commercially made sandwiches in the UK.

Part of the celebrations for the 250th Anniversary of the Sandwich this year, the Lemongrass Prawn and Griddled Spring Vegetable Flatbread will feature in Sandwich of the Month posters during August under the head 'Sun, Sea and Sand-wich'.
