Pidy introduces new nutty frozen sponge sheet
Abstract
Pidy, Belgian-based, ready-to-fill pastry manufacturer, has expanded its Technipat frozen sponge sheets range with the new flavour ‘Jaconde with Cocoa and Nuts’.

The chocolate sponge features almond, coconut and pistachio inclusions which will provide a contrast in textures, and are suitable for a range of sweet applications, from elegant layered cakes and decorative strips, through to individual desserts or even a yule log.

The sponge sheets have a light as air texture but are also robust enough to hold fillings, and can be crafted into different shapes and sizes. The sponge has been made from a traditional recipe of eggs and almond powder, which will bring a rich taste and dense texture. The sponge is not only soft and airy but also flexible enough for chefs and caterers to use as a quality base product that can be transformed.

The sheets are stored frozen, therefore maintaining a shelf life of 12 months while being ready to defrost in a matter of minutes. Once thawed, the quality of the sheets is guaranteed for 48 hours.

They are 580mm long x 380mm wide and 05mm thick, and come in cases of 10.
