Plant Based World - Jackfruit Tuna Mayo

Serves 2

230g jackfruit, drained weight, seeds removed, flaked (230g prepared weight)

65g vegan mayo

½ tsp garlic granules

¼ tsp black pepper

1 tsp ground kombu

1 tsp white miso paste

1 tsp lemon juice

30g baby capers

35g red onion, very finely diced (½ small onion)

5g/2 tbsp chopped parsley

2 Little Gem lettuce or chicory

Preparation method

1. Combine all ingredients

2. Separate Little Gem leaves and fill each one with tuna mix
