Puchero (National dish of Argentina)

Ingredients

500g diced beef 1 small chicken, jointed 1 calf's foot, split (NB: this will probably have to be substituted with a pig's trotter) 1 tsp rock salt 4 medium carrots 300g sweet potato 4 corn on the cobs, halved 750g potatoes 300g pumpkin 125g diced bacon 2 large onions, quartered 8 thick slices of liver sausage 2 beef tomatoes, quartered

Preparation method

Place the beef, chicken and trotter into a large pan and cover with water, bring to the boil and skim. Add the rock salt and simmer for 1½ hours. Meanwhile, peel all the vegetables and dice into large cubes. Add these to the pan, together with all the remaining ingredients (except the liver sausage and tomato). Add more water as required. Continue to cook until the vegetables are tender, then add the tomato and liver sausage. Cook for a further 3-5 mins. Serve in three dishes: one for the meats, one for the vegetables and one for the stock. Country of origin: Argentina
