Whether you're looking to start a new business venture or simply want to add another string to your culinary bow, the Carpigiani Gelato University is a unique way to learn the art of traditional ice cream making.
Run by Carpigiani, the world's largest fresh ice cream equipment manufacturer, the University is an internationally recognised centre of excellence and caterers. The Gelato University has been designed and developed to promote and communicate the culture of Artisan ice cream to a global audience, and aims to spread the word about how to make the best ice cream. As well as practical demonstrations and tastings, the course covers subjects such as market trends, innovation, what is needed for ice cream and ice cream ingredients. A panel of experts are on hand to answer specific queries about production, storage, presentation and sales, as well as give advice on health and hygiene regulations." Speaking from the Carpigiani headquarters near Bologna, Italy, Carpigiani's Chief Executive, Gino Cocchi, said: "Ice cream is not just one product. It provides a platform for making a huge variety of natural foods, with different ingredients and flavourings depending on people's tastes. As incomes rise in many emerging economies, more people are able to afford higher-priced good-quality ice cream. For this reason, it is essential to remember that its production depends on the ice cream being made from fresh ingredients at the retailer's premises, as opposed to being shipped in a ready-made form from far-flung factories. Each ice-cream store needs to invest in the appropriate equipment, such as that supplied by Carpigiani." Every year, approximately 6,000 people attend the Carpigiani Gelato University worldwide.
