
Entrants to the NACC competition were challenged to create an appealing and delicious two-course menu (main and dessert) appropriate for people in a care setting in just 90 minutes. Tomza’s winning menu was:
- Main: Balsamic vinegar and muscovado coq au vin
- Dessert: A whiskey and orange creme Brule with almond puff pastry fingers and semi-frozen orange segments
The Public Sector Catering Expo will take place on 18-19th November at the NAEC Stoneleigh in Warwickshire. It will include an exhibition of over 100 suppliers as well as a lively speaker programme, informative cooking demonstrations and military competition Exercise Joint Caterer (EJC).
Public sector chefs working across the industry including SCOTY winner Erin Ward and 2024 NHS Chef of the Year winners Manuela Miccoli and Alejandro Hernandez will deliver a cooking demonstration whilst talking to hairy biker Si King about working in their specific sector.
Si King is a chef, musician, and TV favourite having been a staple on British TV for over two decades. He has travelled the world and shared his love of food with his loyal audience. These demonstrations will take place on Wednesday 19th November (day two) of the Public Sector Catering Expo.
