As ceramic glass is not porous like the cast iron more commonly used for contact grills, it will not absorb or transfer flavours. The glass also eliminates the smoke and smells associated with cast iron grills, making for a much more pleasant ambience. Heating up time is minimal – just two to five minutes – because as soon as the elements are hot, heat transference through the glass is instant. This also results in much faster cooking times so customers don’t have to queue. The fast heat up and cooking times also reduce energy costs significantly.

The Saf-T-Knife Station protects knives from contamination and damage, as well as reducing the risk of accidents and staff injury. Designed to accommodate a variety of knife blade lengths and widths, the Saf-T-Knife station is manufactured by San Jamar and distributed in the UK by FEM. The VarioSmoker is simple to use: all chefs have to do is fill its pan with wood chips or pellets, pop it in the Rational combi steamer and plug in the cable.   “The new accessory allows chefs to save time by cooking and smoking the food simultaneously,” said Lee Norton, managing director of Rational UK.  “Because there’s no need to buy a separate smoker oven, it saves space and investment costs, too.”
